Lamb Spaghetti & Meatballs #MeatMatters Challenge

We’re a big meat eating family & I love incorporating a lot of flavour and vegetables into Frankie’s diet, especially at dinner time. One of our staple meals during the week are meatballs, either lamb or beef. They’re so easy and simple to make, they take under 30 minutes, which is great on a work day & it costs under £10 to feed a family (+ leftovers).

You can easily disguise a host of vegetables into a spaghetti & meatball dish by shredding/grating in the plating. Here is how to make Spaghetti & Meatballs:

Shopping List

  • 500g Lamb/or Beef Mince
  • Spaghetti
  • Tomato Passata
  • Baby Plum Tomatoes
  • Tomato Puree (I choose added garlic)
  • x1 Onion
  • x1 Garlic
  • Fresh Basil
  • Garlic Bread
  • *optional* x2 Carrots
  • *optional* x1 Courgette
  • *optional* any vegetables you like! I always go for the above but sometimes add babycorn too, dependent on the season!

In The Cupboards

  • x2 slices of bread
  • Beaten Egg
  • Oregano
  • Thyme
  • Cheese

Method

  1. Use a grater to shred the carrots and put to one side (& shred the courgette if hiding the veg from fussy eyes but I prefer to chop for the crunch)
  2. Finely chop the onion
  3. Quarter the tomatoes
  4. Chop the basil
  5. Finely grate/tear x2 slices of bread to make breadcrumbs
  6. Add the breadcrumbs & onions together in a large bowl
  7. Peel 2-3 garlic cloves *to taste* & add to bowl
  8. Add x1 egg
  9. Season to taste – I use *salt, pepper, oregano, thyme*
  10. Add the lamb/beef mince
  11. Time to get your hands dirty! Roll into 12-14 large meatballs or 20ish small meatballs
  12. Heat oil in a pan and start cooking the meatballs, turning them to ensure each side is sealed & browned off
  13. Once the meatballs are cooked, add in the vegetables, basil & tomato passata
  14. Squeeze in the tube of tomato paste
  15. Boil up the desired spaghetti portion whilst the meatballs & sauce are cooking
  16. Cook for 5-10 minutes on a moderate heat
  17. Remove the meatballs from the mixture
  18. Drain the spaghetti and add to the sauce & vegetable mixture
  19. Add the water the spaghetti cooked in to the sauce & vegetable mixture
  20. SERVE!! Add grated cheese/Parmesan for added flavour

I serve with garlic bread & grated cheese for added flavour! We choose ‘Hearty Food Co’, exclusive to Tesco for our garlic bread for just 32p!! The total of the whole meal comes to just £8.89 & serves Mummy, Daddy & Frankie with enough for leftovers to freeze or take for lunch the next day so would definently serve a bigger family!
